This is a post about avocado toast.

Last Friday, MVTF/MVXC friend Josh Cox shared his go-to avocado toast recipe on our weekly zoom meeting.  Several Monta Vista athletes then made and shared their own creations.

Triya’s creation included everything bagel seasoning, nutritional yeast, a good drizzle of extra-virgin olive oil, and an egg on top; cooked tomatoes and mushrooms were wingmen.

Vivian changed things up with a hard-boiled egg, chopped almonds for crunch, and some sriracha (nice!).

Sean claimed to be making avocado toast for the first time, and I can’t do justice to his epic poem describing the process–let’s just say that a picture will have to represent at least 1,000 words in this case.

Ria showed off a bit, doubling up with a second toast that featured ricotta, pesto and pickled radishes (oh, my!).

And Coach Flatow added one more for contrast–the avocado’s sliced instead of mashed with some arugula, fresh fava beans and fresh buffalo mozzarella. 

Coach Flatow’s niece Heidi got in the act and sent in her own (she made her own bread).  

We hope that this inspires you to create your own avocado toast soon!  Avocado toast is pretty great.
